I really like this policy, it clearly lays out what data they have, why they have it, and what they do with it. It also gives a clear explanation of what these terms mean, like "cookies", which is wonderful, you love to see it. They also lay out in what lone situation they would hand over your data, and they are very specific about it.
I want to normalize reading privacy polices, and I think this one is a great example of one that is easy to understand, as it explains itself along the way.

I personally use posteo, and it seems to have a good privacy policy to me. I probably should read into it more, though.

For a euro a month, it is really cheap. I have used protonmail for free, but they are so expensive if you want to pay for an email.
